There are a lot of things that are followed along with the best books you need to refer to for IIT-JEE 2021.

Physical Chemistry: OP Tandon and N Awasthi are very famous for Physical Chemistry. Alternatively, Morrison and Boyd is also good for a few specific topics.
Organic Chemistry: You can choose between OP Tandon or MS Chauhan as they are widely used among the JEE aspirants.
Inorganic Chemistry: Arihant Series is essential for this particular subject as this has many questions to practice.
Mathematics: This subject needs a lot of practice and it is only this subject where students are not able to score. So RD Sharma and Cengage series are best known for preparing students for JEE exams.
